Thalheimer beer - unique in the world, brewed with curative water

Beer consists of around 90% water. Water is neither odorless nor tasteless, its mineralization has a significant influence on appearance, taste and brewing process - and therefore on the entire beer style. 13

Brewing water must be of drinking water quality and also must comply with  strictest microbiological and chemical limit values. 13


The water hardness, depending on the terroir and hydrogeology, influences enzyme activity and the solubility of bitter substances or proteins via the pH value. It largely determines the quality of the beer through the reactions of the carbonates with the phosphates in the malt. This in turn is closely related to the saccharification of the malt, viscosity, filtering and taste. 13 


From a historical point of view, it was not at all a coincidence that different beer styles arose in the world's well-known beer regions; even back then, water played a very central role! Brewing water with a higher mineral content had and still has a positive effect on full-bodied, darker styles, while brewing water with a lower mineral content brought and still produces lighter and softer beers. 13 


But in Thalheim near Pöls in Styria, the Märzen and Pils beer styles are produced with highly mineralized medicinal water from the oldest health fountain in Styria. Up to now an impossibility. 11, 15 


The secret of the Thalheimer Schlossquelleb

On the Pölshals on the southern slope of the Murtal there are very special springs that bubble up under their own power - artesian - from a depth of 300 meters.  11


 

The Thalheim curative water has been filtered and purified through the soil layers of mica slate and crystalline lime for over 25,000 years. It enriches itself in a completely natural way with sodium, potassium, calcium, magnesium, chloride, sulfate, hydrogen carbonate and lithium - which we are able to smell and taste. 11, 10, 14 


 The very long history of the castle springs in Thalheim in the Murtal extends from the Celts and Romans to the present day. The local Styrian farmers once even took a bath at the spring to refresh their body and mind. 14 


Excavations also show that the Celts and Romans already knew, valued and used the water. At Sauerbrunn Castle in Thalheim, the Norische Hauptstrasse crossed with the Roman Murtalstrasse and fresh and clean water was very necessary. 14


Franz von Teuffenbach recognized the potential of this special water and had a castle built over the springs between 1522 and 1562, which is now also knwon as Sauerbrunn Castle. In his will in 1576 he stipulated that a foundation for the poor should be founded after his death. A foundation that still exists today. 14 


 The water from Thalheim has been used as a health fountain since around 1578 - the scientifically proven preventive, soothing and healing effects are used for various illnesses and complaints, often in the form of a drinking cure. 14, 10 

 
In 1908 it received a prize for the best source version at the World Exhibition in Brussels. In 1909 it was recognized as one of the best medicinal waters by the Graz State Research Institute. In 1910 around 500,000 bottles were filled and sold. But over the course of the 20th century, the springs slowly fell into disrepair before they were finally shut down. 14, 10 

REVIVAL OF THE SPRINGS IN 2018

The special tradition of Thalheim's curative water was taken up again in 2018 and revitalized by Dietrich and Mark Mateschitz by modernizing the system, so the water, which is particularly rich in minerals became available again. 14 

 

The Thalheim curative water is very hard due to its high mineral content and with a German hardness of around 70 degrees. 10, 14, 11 


This high level of mineralization is the basis for the full-bodied and nuanced Thalheimer Märzen or the slightly bitter Pils - since autumn 2023 there has been another style that goes particularly well with the curative water characteristics: an elegant dark one with roasted aromas, a light coffee note, a touch of hazelnut and dark chocolate.  11 

 

The Thalheim GmbH now also produces characterful lemonades, made with the special curative water. 11 

Unique in the world – the big bang in the brewing world

Step by step, the world's first and only beer was created, exclusively made with curative water. A combination of newly developed system concepts and the use of new materials led to a big bang throughout the brewing world in 2018! 11


After about 4 years of research and development, outstanding beer styles have been created with a globally unique mineral diversity and mineral density, a characteristically harmonious taste, embedded in the medium of curative water. 11 

 

It was therefore not surprising that international experts followed this development with keen eyes, after the literature  saw no possibility from a biochemical, sensory and technical point of view. 15 


The curative water should be treated before the brewing process by removing dissolved minerals and trace elements. The high mineralized curative water would be too corrosive if left untreated and would destroy the system in a very short time. This change to the unique Thalheim healing water was never an option for the team of Thalheim. What was considered impossible in professional circles became an attractive challenge for master brewer Koloman Strohmeier. 15, 11

 New technology, quality without compromise and STEEL 

After numerous trials and material tests, a special steel was used for the first time by the German Krones AG, the world's leading manufacturer of high-tech brewing systems, in close collaboration with the experts in Thalheim. 11, 15 

It is precisely this facility that expresses the special character of Thalheim's curative water in the most enjoyable way. In addition, the Thalheim team works according to the toughest international quality standard for food, “Good Manufacturing Practice” (GMP). 11 


Production and raw materials are constantly checked by two state-of-the-art laboratories. The legal requirements for quality assurance are far exceeded by a weekly instead of annual drinking water analysis. 11, 15

Thalheimer Pils is light, tart and tangy. Extra light Pilsner malt serves as the base body, which impresses with its pleasant hop note and light initial taste. An attractive, very slight hop bitterness accompanies every sip on the palate until the tangy, spicy-floral finish. The selected hop varieties round off with top notes of citrus and bergamot. 11 


 

The Thalheimer Märzen is full-bodied and rich in nuances. Selected Pilsner malt provides the full-bodied base body, caramel malt complements it with a sparkling touch of amber. The selected hop varieties give a wonderful hop bouquet with green-grassy nuances and a very light, tart-bitter tone in the finish. 11 



The Thalheimer Radler consists of half Thalheimer Märzen and half natural lemonade. The much higher lemon juice content of the lemonade gives the Thalheimer Radler an additional, refreshingly fruity appeal - pleasantly tart, charmingly sweet and refreshingly sour. 11


 

Thalheimer Dunkel is a special, bottom-fermented black beer with light dried notes and aromas of hazelnut, roasted malt and coffee. Deep black with ruby ​​red hints, round and harmonious. 11 

Brewmaster Koloman Strohmeier

Koloman Strohmeier was "infected" with the brewing virus at the age of 16. As soon as he made his first brew, it was clear to him that he wanted to do this his whole life. 15

And so his path after graduating from high school took him through an apprenticeship as a brewer to studying food technology at the University of Natural Resources and Life Sciences. He also gained experience in numerous breweries of various sizes and expanded his special knowledge by reading numerous old and new specialist works. From the beginning, the aim was to create a bombastic product with the untreated water. 15 


In Germany and Austria the average for brewing water is between 7 - 14 degrees of German hardness. Harder water requires special recipes, for example to adapt hop bitterness to the water. 15 


And with the natural ingredients that occur naturally in dissolved form, such as magnesium, calcium, hydrogen carbonate, sodium, sulfate, fluorine and even lithium, you not only support your water balance, but also drink anti-hangover ingredients.  15, 11, 10, 4, 6, 8, 3 

WaterKnowledge

The Austrian "Lebensmittelbuch", natural mineral water includes four types of water: natural mineral water, spring water, table water and drinking water. Extraction, bottling, analyzes and labeling are regulated in the Mineral Water and Spring Water Ordinance and the Drinking Water Ordinance. 1, 2, 12
 

In Austria, medicinal water is subject to the Healing Resources and Health Resorts Act, and in Germany to the Medicines Ordinance. 5


The detailed requirements for drinking water can be found in Chapter B1 in the Austrian Food Code. 12 


How get minerals absorbed from curative water?                                                             Minerals and trace elements are better absorbed from mineral and medicinal waters than from solid foods because they are already in dissolved form. (See ingredients Thalheimer Heilwasser, AoUniv. Prof. Dr. W. Marktl, President of the GAMED-Vienna International Academy for Holistic Medicine, 2023) 3, 6 


Why is staying hydrated so important?

Humans consist of 50-80% water, but cannot store it sufficiently and have to drink at least 30 - 40 ml of fresh water per kilogram of body weight every day to maintain a positive water balance - also in order to stay mentally, physically and socially fit. It not only affects bones, teeth, digestion, metabolism, circulation, nerves and acid-base balance, but also our thinking processes, feelings and mood. 13, 11, 6, 8

Water types

Curative water meets the requirements of natural mineral water and also contains special combinations of minerals and trace elements with a scientifically proven medically healing, preventative or soothing effect. The highest legal requirements apply. In Germany, medicinal waters are therefore even subject to the Medicines Act. The Greeks and Romans already used medicinal waters for internal and external use, for daily use and for drinking cures. 5, 12 


 

What is the positive effect of lithium in Thalheim’s curative water?
The content in one liter of Thalheimer curative water corresponds to the usual daily intake through food. Lithium is associated with many positive effects on mental health and well-being. Drinking Thalheimer medicinal water regularly can be proven to have a positive effect on your health. (See ingredients Thalheimer Heilwasser, AoUniv. Prof. Dr. W. Natural mineral water is an originally pure and natural product from underground sources that are protected from contamination. It must be microbiologically perfect. This means that only de-icing or the removal or addition of carbon dioxide is permitted. Specified limit values ​​for arsenic, cadmium, chromium, etc. must of course be adhered to. 1, 2

A recognition process with over 200 geological, chemical and microbiological studies by authorities, independent institutes and mineral water companies guarantee a high level of natural safety from source to table. Natural mineral water may only be bottled directly at the source in bottles with a safety ring. 1, 2


Natural mineral water is officially recognized in Austria by the Ministry of Health and have a usage permit. The analysis values ​​on the label provide information about the ingredients and their effect or use. 1, 2


Spring water comes from underground sources that are protected from contamination. It does not require an official recognition process and does not have to be as constant in its composition as natural mineral water or medicinal water. 12, 1, 2 


Table water can and may be produced anywhere and consists of tap water with brine and carbon dioxide. It must meet drinking water requirements and may also be filled into containers. The best-known representative in Austria is soda, which, however, does not correspond to the German version of soda. 12, 1 


Tap water in Austria is 99% pure spring water. It must be free of pathogenic germs, fit for consumption, pure and meet the guidelines of the Drinking Water Ordinance up to the water meter. To make it fit for human consumption, it may be subsequently processed using legally specified methods, such as ozone or chlorination. This is strictly forbidden for mineral and medicinal waters. 12, 9
